3 tbs olive oil
1 cup finely sliced onion
2 tbs balsamic vinegar
Sea salt
Finely ground black pepper
4 thin slices sirloin or fillet streaks
8 thick slices bread eg ciabatta
1 bunch rocket
4 ripe tomatoes, sliced
Garlic Creme
2 egg yolks
1tbs balsamic vinegar
2 cloves garlic, crushed
Sea salt
Freshly ground black pepper
1 cup canola or other mild oil
Heat 2 tbs olive oil in large frying pan over medium heat, add onion and cook for 10 minutes, stirring frequently until goldern. Add vinegar, salt and pepper and cook for 1 minute longer until caramelises. Remove onion from pan and set aside.
Using same pan, heat remaining oil over high heat. Add stark to pan and sprinkle with S&P. Cook for 1 minute, turn and cook the othe side for 1 minute.
Spread bread with garlic creme. Place rocket on 4 of slices and top with tomatoes. Place onions on top of tomato followed by steak. Top with second slice of bread.
Garlic Creme
Place egg yolks, vinegar, garlic, S&P in bowl and whisk until combined. Add oil drop by drop, whisking constantly. When sauce starts to thicken add oil in steady stream until oil is fully incorporates. If creme is too thick, thin with a tbs of warm water.
