Apple Crumble Slice

Ingredients
125g butter, softened
1/3 cup (75g) caster sugar
1 cup (150g) White Wings Plain Flour
1 egg yolk
1 teaspoon vanilla extract
4 red apples, cored and sliced
2 tablespoons caster sugar, extra
1 teaspoon ground cinnamon

Crumble topping
½ cup (75g) White Wings Plain Flour
¼ cup (55g) caster sugar
¼ cup (20g) shredded coconut
75 unsalted butter, softened

Method

Preheat oven to 170ÂșC (fan forced). To make the crumble topping, place the flour, sugar, coconut and butter in a bowl and rub together with your fingertips until the mixture resembles coarse breadcrumbs.
 Set aside.
Process the butter, sugar and flour in a food processor until combined. Add the egg yolk and vanilla and process until the mixture forms a soft dough.
Press into a 20cm x 30cm slice tin lined with non-stick baking paper. Bake for 12–15 minutes or until the base is golden. Allow to cool. Place the apples, extra sugar and cinnamon in a bowl and toss to combine. Top the base with the apple mixture and the crumble mixture.
Bake for 50–55 minutes until golden brown.
Serves 12.
