Grandmas Oat waffles


60g rolled oats
45g butter
175g plain flour
1 Tbs caster sugar
1 1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
2 eggs
250ml buttermilk

Combine oats with 300ml water. Simmer and stir for 3 minutes. Stir in butter.
Sift flour, sugar, baking powder, bicarbonate and salt. In another bowl, combine eggs and buttermilk. Stir into egg mixture. Mix in dry ingredients. Do not overbeat.
