Friands

½ cup plain flour

1½ cups icing sugar, sifted

1 cup ground almonds

6 egg whites, about ¾ cup

190 g Noisette Butter, melted and cooled a little (see method for how to make Noisette Butter)

40 raspberries or blueberries , fresh or frozen


Preheat oven to 180°C and grease mini-muffin tins or moulds with a little of the butter. In a large bowl, combine flour, sugar and ground almonds. In a separate bowl, whisk egg whites to a loose froth, then combine with butter. Make a well in flour mixture and pour in butter mixture. Mix gently, taking care not to overmix.

Spoon mixture into tins until each is two-thirds full. Press 4 raspberries into each friand. Bake for 20–25 minutes until friands feel a little springy and a fine skewer inserted comes out clean. Cool in tins on a wire rack for a few minutes before turning out. Set friands right-side up and allow to cool. Enjoy with tea or coffee.

Noisette Butter
Melt and simmer butter in a saucepan. Cook the butter until it is golden brown and begins to smell nutty. The milk solids will appear as golden specks at the bottom of the saucepan. Stop the cooking quickly by putting the pan into a basin of cold water.

Eggs

Boiled Eggs:

Boil water.  Add room temperature eggs and adjust till water simmering.

Soft Boiled Eggs: 4 minutes
Medium Boiled Eggs: 5-6 minutes
Hard Boiled Eggs: 10 minutes

Poached Eggs:

Boil water. Add egg and cook for 3 minutes with lid on.

Mini Quiches

Mini Quiches
Sal's Auntie Hels                              (makes 24)
,2 sheets puff pastry, thawed
,1 onion, finely chopped
,1-2 rashers bacon, finely chopped
,1/2 cup grated cheese
,2 eggs
,1/2 cup milk
,seasoning, to taste
Method
,Using 6.5 cm cutter, cut 24 rounds of pastry to line patty tins
,Combine onion, bacon and cheese
,Combine eggs, milk and seasoning.  Beat with fork.
,Pour onion, bacon and cheese into tins evenly. Then add liquid ontop.
,Bake in hot oven (450F) for 15-20 min or until golden and puffed.
(Can be frozen and reheated)

Amy Stannards Quiche

Amy Stannard's Quiche
Ingredients
,Puff Pastry
,4 Eggs
,1 carton sour cream
,2 tomatoes
,Filing:cooked bacon and onion
roasted veges eg pumpkin, eggplant, capsicum
semi dried tomato
fresh basil leaves
mixed herbs
Salmon
Method
,Butter Dish and put breadcrumbs on the bottom of the dish
,Line greased dish with Puff Pastry
,Add the veges + herbs to dish
,Sprinkle grated cheese on top of veges
,Beat 4 eggs with 1 carton of sour cream
,Pour eggs/cream mixture over veges
,Slice tomatoes
,Place sliced tomatoes neatly ontop of mixture as decoration
