Energy Balls

Makes 32

1 can chickpeas, drained and rinsed
1/2 cup raw mixed nuts et almonds, walnuts, hazelnuts
1/4 cup sunflower seeds
1/4 cup pumpkin seeds/ pepitas
1 cup rolled oats
1/2 cup shredded coconut 
1 tsp ground cinnamon
1/3 cup dried cranberries
2 tbs raisins
2 tbs dried apples/apricots, diced
2 tbs water
3 tbs honey, maple or golden syrup
1 tsp vanilla extract

Method

Blend nuts, seeds and oats till coarse. Add coconut, cinnamon and dried fruits
Place chickpeas in food processor with water, honey and vanilla and purée to smooth pasted
Mix ingredients. Add more water if needed.
Make into Balls, roll in coconut.
Place in airtight container and store in fridge
