Poach Chicken breasts as per Matt Preston

Add enough stock to pan and put on lid.  (About 500mls  per breast)

Bring to boil.

Add chicken.

Remove from heat. Leave covered 45 min.

If in a rush, heat up stock when add chicken to boiling then take off heat.
